Seared tuna steak with spinach, sweet potato wedges and mango salsa
Hello fit fam! I had this meal in a pub in Lymm recently and decided to “fast track” it to an all singing and all dancing nutritious meal!
So keeping this as simple as possible I’m going to just start with the ingredients then follow with the basic instructions!
Tuna steak
Fresh tuna steaks
Kerry gold butter
2-5 garlic cloves
Black pepper to taste
Sea salt to taste
Salsa
1 cup diced mango
1 cup diced pineapple
1 plum tomato diced
1 sweet re pepper diced
1 sweet onion diced
Jalapeño peppers diced
2tbsp coriander minced
Juice of one lime
Juice of 1/2 lemon
Sweet wedges
1-3 sweet potatoes
Coconut oil
Basil
Black pepper
Sea salt
Spinach
1 bag of Spinach
Pinch of sea salt

To make the tuna steaks pre heat a griddle pan with crushed garlic, sea salt and black pepper. Cook the tuna for 2-5mins either side dependant on preference.
The salsa is the most time consuming thing to do due to the amount of chopping involved. Dice, chop and Mince all the ingredients and squeeze the lime and lemon juice in, mix well. Stand for 30minutes.
Wedges can not be easier. Pre heat the oven to 180 and place a baking tray with coconut oil in to the oven. Chop the sweet potato length ways in to 4-8 segments depending on size. Take the tray out and coat the potato with the oil and add herbs to taste.
Garnish the plate with a good handful of slightly wilted spinach cooked in butter and any fresh veg, I used plum tomatoes.
